Recipes from the Road: Crispy Homemade Fried Cheese Bites

Ingredients

1 cup all-purpose flour

2 large eggs

2 cups panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 pound cheese (mozzarella, cheddar, or your favorite), cut into bite-sized cubes

Vegetable oil, for frying


Directions

Prepare Breading Stations:

Place the flour in a shallow dish.

Beat the eggs in a second shallow dish.

In a third shallow dish, mix together the panko breadcrumbs, garlic powder, onion powder, paprika, salt, and black pepper.

Bread the Cheese:

Dip each cheese cube first in the flour, then in the beaten eggs, and finally in the breadcrumb mixture, pressing gently to ensure the breadcrumbs adhere. For extra crispy bites, repeat the egg and breadcrumb steps for a second coating.

Heat Oil:

In a large, deep skillet or pot, heat about 2 inches of vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Cheese Bites:

Fry the cheese bites in batches, being careful not to overcrowd the pan. Fry until golden brown and crispy, about 1-2 minutes per side.

Use a slotted spoon to transfer the fried cheese bites to a paper towel-lined plate to drain any excess oil.

Serve hot with your favorite dipping sauce, such as marinara, ranch, or honey mustard.
