Chicken & Orzo Veggie Soup By: Malinda Blakely

INGREDIENTS
1 tsp oil
½ cup chopped onion
1 carrot, peeled and chopped
4 garlic cloves, pressed
1 tsp dried oregano
8 cups chicken both
2 cups water
¼ tsp black pepper
¼ tsp salt
2/3 cup uncooked orzo
3 cups diced cooked chicken
2 cups chopped zucchini
½ cups roasted red peppers
2 tbsp lemon juice
DIRECTIONS
Heat oil in a 8 qt pot over medium heat. Add onions, carrots, garlic and oregano. Cook and stir for 3 minutes.
Add the broth, water, black pepper, and salt. Bring to boil over medium heat. Stir in orzo and cook for 8-10 minutes, until orzo is tender.
Add the chicken, zucchini and red pepper and return to boil. Cook for 1 minutes then remove from heat. Stir in the lemon juice. Serve & enjoy!
